  • 1 (15-ounce) can black beans, rinsed and drained

  • 1 (15-ounce) can corn, drained

  • 1 (10-ounce) can enchilada sauce, mild or medium

  • 1 cup shredded cheddar cheese

  • 1/2 cup chopped onion (optional)

  • 1/4 cup chopped cilantro (optional)

Instructions:

  1. Combine ingredients: In a large microwave-safe dish, combine the cooked quinoa, black beans, corn, enchilada sauce, and half of the shredded cheese. Stir in the onion and cilantro, if using.

  2. Microwave: Cover the dish with a microwave-safe lid or vented plastic wrap. Microwave on high for 10-15 minutes, or until heated through and bubbly.

  3. Top with cheese: Remove the casserole from the microwave and sprinkle with the remaining cheese. Let stand for a few minutes to allow the cheese to melt.
