Delicious and Healthy Quinoa Enchilada Casserole: An Easy Recipe

Yields: 4-6 servings

Ingredients:
1 cup quinoa, cooked
1 (15-ounce) can black beans, rinsed and drained
1 (15-ounce) can corn, drained
1 (10-ounce) can enchilada sauce, mild or medium
1 cup shredded cheddar cheese
1/2 cup chopped onion (optional)
1/4 cup chopped cilantro (optional)
Instructions:
Combine ingredients: In a large microwave-safe dish, combine the cooked quinoa, black beans, corn, enchilada sauce, and half of the shredded cheese. Stir in the onion and cilantro, if using.
Microwave: Cover the dish with a microwave-safe lid or vented plastic wrap. Microwave on high for 10-15 minutes, or until heated through and bubbly.
Top with cheese: Remove the casserole from the microwave and sprinkle with the remaining cheese. Let stand for a few minutes to allow the cheese to melt.
Serve: Serve hot, garnished with additional cilantro, a dollop of sour cream, or your favorite toppings.
Tips and Variations:
Spice it up: For a spicier casserole, use a hot enchilada sauce or add a chopped jalapeño pepper.
Add vegetables: Feel free to add other vegetables, such as diced bell peppers, zucchini, or mushrooms. Sauté them before adding to the casserole.
Make it creamy: Stir in a dollop of sour cream or Greek yogurt before serving for extra creaminess.
Make it ahead: Assemble the casserole ahead of time and store it in the refrigerator. When ready to cook, microwave as directed.
