Pad Thai with Sweet Potatoes: Traditional pad Thai with roasted sweet potato chunks for sweetness

Serves: 4 people
Ingredients:
1 pound sweet potatoes, peeled and cubed
1 tablespoon olive oil
1/2 cup rice noodles
2 tablespoons fish sauce
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 tablespoon brown sugar
1/2 teaspoon chili flakes
1/4 cup chopped peanuts
1/4 cup chopped cilantro
1/4 cup lime wedges
Instructions:
Preheat oven to 400 degrees F (200 degrees C). Toss sweet potatoes with olive oil and spread in a single layer on a baking sheet.3 Roast for 20 minutes, or until tender.
Cook rice noodles according to package directions. Drain and rinse with cold water.
In a small bowl, whisk together fish sauce, soy sauce, rice vinegar, brown sugar, and chili flakes.
In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add sweet potatoes and cook for 2 minutes, or until heated through.
Add rice noodles and sauce to the skillet. Toss to coat.
Cook for 2 minutes, or until heated through.
Serve immediately, topped with peanuts, cilantro, and lime wedges.
