Pad Thai with Sweet Potatoes.

Prep time: 20 minutes Cook time: 30 minutes Serves: 4 people

Ingredients:

  • 1 pound sweet potatoes, peeled and cubed

  • 1 tablespoon olive oil

  • 1/2 cup rice noodles

  • 2 tablespoons fish sauce

  • 1 tablespoon soy sauce

  • 1 tablespoon rice vinegar

  • 1 tablespoon brown sugar

  • 1/2 teaspoon chili flakes

  • 1/4 cup chopped peanuts

  • 1/4 cup chopped cilantro

  • 1/4 cup lime wedges

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C). Toss sweet potatoes with olive oil and spread in a single layer on a baking sheet.3 Roast for 20 minutes, or until tender.

  2. Cook rice noodles according to package directions. Drain and rinse with cold water.

  3. In a small bowl, whisk together fish sauce, soy sauce, rice vinegar, brown sugar, and chili flakes.

  4. In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add sweet potatoes and cook for 2 minutes, or until heated through.

  5. Add rice noodles and sauce to the skillet. Toss to coat.

  6. Cook for 2 minutes, or until heated through.

  7. Serve immediately, topped with peanuts, cilantro, and lime wedges.
