Ingredients:
Noodles:
10 ounces fresh wide rice noodles (or dried, soaked according to package directions)
Protein:
8 ounces thinly sliced chicken, pork, beef, or tofu (or a combination)
Sauce:
2 tablespoons soy sauce
1 tablespoon dark soy sauce
1 tablespoon sweet soy sauce (optional, for extra sweetness)
1 tablespoon rice vinegar
1 teaspoon sugar
Vegetables:
2 cups Chinese broccoli, chopped (or regular broccoli)
2 cloves garlic, minced
Cooking:
2 tablespoons vegetable oil
1 egg
Equipment:
Wok or large skillet
Spatula or tongs
Instructions:
Preparation:
Prepare the noodles: If using fresh noodles, separate them gently. If using dried, soak according to package directions until softened.
Marinate the protein: In a bowl, combine the protein with 1 tablespoon of soy sauce. Let marinate for at least 10 minutes.
Make the sauce: In a small bowl, whisk together the remaining soy sauce, dark soy sauce, sweet soy sauce (if using), rice vinegar, and sugar.
Prep vegetables: Wash and chop the Chinese broccoli. Mince the garlic.
Cooking:
Heat the wok: Place the wok or large skillet over high heat until very hot.
Stir-fry the protein: Add 1 tablespoon of vegetable oil to the wok. Add the marinated protein and stir-fry until cooked through. Remove from the wok and set aside.
Cook the noodles: Add the remaining 1 tablespoon of vegetable oil to the wok. Add the noodles and stir-fry for 1-2 minutes until they start to soften.
Add the sauce: Pour the sauce over the noodles and continue to stir-fry until the noodles are well coated and slightly browned.
Add the vegetables: Push the noodles to one side of the wok. Add the garlic and Chinese broccoli to the other side and stir-fry for 1-2 minutes until the garlic is fragrant and the vegetables are slightly softened.
Combine and finish: Mix the noodles and vegetables together. Make a well in the center of the wok and crack in the egg. Scramble the egg quickly, then incorporate it into the noodles and vegetables.
Add protein: Return the cooked protein to the wok and toss everything together.
Serve: Transfer the Pad See Ew to plates and serve immediately.
Tips:
Use fresh wide rice noodles for the best texture. If unavailable, dried noodles can be substituted.
Adjust the amount of sauce according to your preference.
Feel free to add other vegetables such as carrots, peppers, or baby corn.
For a spicier dish, add a pinch of chili flakes or a drizzle of sriracha sauce.
Garnish with a lime wedge and chopped peanuts for extra flavor.
