Yields: 2 servings  Prep time: 20 minutes Cook time: 10 minutes

Ingredients:

  • Noodles:

    • 10 ounces fresh wide rice noodles (or dried, soaked according to package directions)

  • Protein:

    • 8 ounces thinly sliced chicken, pork, beef, or tofu (or a combination)

  • Sauce:

    • 2 tablespoons soy sauce

    • 1 tablespoon dark soy sauce

    • 1 tablespoon sweet soy sauce (optional, for extra sweetness)

    • 1 tablespoon rice vinegar

    • 1 teaspoon sugar

  • Vegetables:

    • 2 cups Chinese broccoli, chopped (or regular broccoli)

    • 2 cloves garlic, minced

  • Cooking:

    • 2 tablespoons vegetable oil

    • 1 egg

Equipment:

  • Wok or large skillet

  • Spatula or tongs

Instructions:

Preparation:

  1. Prepare the noodles: If using fresh noodles, separate them gently. If using dried, soak according to package directions until softened.

  2. Marinate the protein: In a bowl, combine the protein with 1 tablespoon of soy sauce. Let marinate for at least 10 minutes.

  3. Make the sauce: In a small bowl, whisk together the remaining soy sauce, dark soy sauce, sweet soy sauce (if using), rice vinegar, and sugar.

  4. Prep vegetables: Wash and chop the Chinese broccoli. Mince the garlic.

Cooking:

  1. Heat the wok: Place the wok or large skillet over high heat until very hot.

  2. Stir-fry the protein: Add 1 tablespoon of vegetable oil to the wok. Add the marinated protein and stir-fry until cooked through. Remove from the wok and set aside.

  3. Cook the noodles: Add the remaining 1 tablespoon of vegetable oil to the wok. Add the noodles and stir-fry for 1-2 minutes until they start to soften.

  4. Add the sauce: Pour the sauce over the noodles and continue to stir-fry until the noodles are well coated and slightly browned.

  5. Add the vegetables: Push the noodles to one side of the wok. Add the garlic and Chinese broccoli to the other side and stir-fry for 1-2 minutes until the garlic is fragrant and the vegetables are slightly softened.

  6. Combine and finish: Mix the noodles and vegetables together. Make a well in the center of the wok and crack in the egg. Scramble the egg quickly, then incorporate it into the noodles and vegetables.

  7. Add protein: Return the cooked protein to the wok and toss everything together.

  8. Serve: Transfer the Pad See Ew to plates and serve immediately.

Tips:

  • Use fresh wide rice noodles for the best texture. If unavailable, dried noodles can be substituted.

  • Adjust the amount of sauce according to your preference.

  • Feel free to add other vegetables such as carrots, peppers, or baby corn.

  • For a spicier dish, add a pinch of chili flakes or a drizzle of sriracha sauce.

  • Garnish with a lime wedge and chopped peanuts for extra flavor.
