Ingredients:
2 large eggs
2 tablespoons milk (any type)
1/4 cup shredded cheese (any kind, cheddar, Monterey Jack, etc.)
1-2 tablespoons chopped vegetables (optional, such as bell peppers, onions, spinach, mushrooms)
Salt and pepper to taste
Optional: Pinch of dried herbs (like oregano, thyme, chives)
Instructions:
Combine Ingredients: In a microwave-safe mug, whisk together eggs and milk until well combined. Stir in shredded cheese, chopped vegetables (if using), salt, pepper, and any desired herbs.
Microwave: Microwave the mug on high for 1 minute.
Stir: Carefully remove the mug from the microwave and stir the mixture.
Cook Further: Microwave for an additional 1 minute, or until the eggs are set and no longer runny.
Let Stand: Let the omelet stand in the mug for a minute or two to allow the residual heat to cook it through.
Serve: Carefully remove the omelet from the mug and enjoy immediately.
