Microwave Omelet in a Mug



Yields: 1 serving

Prep time: 5 minutes

Cook time: 2 minutes


Ingredients:


  • 2 large eggs

  • 2 tablespoons milk (any type)

  • 1/4 cup shredded cheese (any kind, cheddar, Monterey Jack, etc.)

  • 1-2 tablespoons chopped vegetables (optional, such as bell peppers, onions, spinach, mushrooms)

  • Salt and pepper to taste

  • Optional: Pinch of dried herbs (like oregano, thyme, chives)


Instructions:


  1. Combine Ingredients: In a microwave-safe mug, whisk together eggs and milk until well combined. Stir in shredded cheese, chopped vegetables (if using), salt, pepper, and any desired herbs.

  2. Microwave: Microwave the mug on high for 1 minute.

  3. Stir: Carefully remove the mug from the microwave and stir the mixture.

  4. Cook Further: Microwave for an additional 1 minute, or until the eggs are set and no longer runny.

  5. Let Stand: Let the omelet stand in the mug for a minute or two to allow the residual heat to cook it through.

  6. Serve: Carefully remove the omelet from the mug and enjoy immediately.
