Crispy Zucchini Fritters with Tangy Yogurt Dip: A Summer Delight | Easy Recipe
Yields: Approximately 12-15 fritters Prep time: 20 minutes Cook time: 25 minutes
Ingredients:
For the Fritters:
2 medium zucchini, grated
1/2 teaspoon salt
1/2 cup all-purpose flour
1/4 cup chopped fresh dill
1/4 cup chopped fresh parsley
1 egg, lightly beaten
2 tablespoons olive oil, for frying
For the Yogurt Dip:
1 cup plain Greek yogurt
1 clove garlic, minced
1 tablespoon lemon juice
2 tablespoons chopped fresh mint
Salt and pepper to taste
Instructions:
Make the Fritters:
Grate the zucchini and place it in a colander. Sprinkle with salt and let it sit for 15 minutes to draw out excess moisture.
Squeeze the zucchini dry using your hands or a clean kitchen towel. This step is crucial for crispy fritters.
In a medium bowl, combine the drained zucchini, flour, dill, parsley, and egg. Mix well.
Heat the olive oil in a large skillet over medium heat.
For each fritter, drop a tablespoon of the zucchini mixture into the hot oil. Flatten slightly with the back of a spoon.
Cook the fritters for 3-4 minutes per side, or until golden brown and crispy.
Remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.
Make the Yogurt Dip:
In a small bowl, combine the Greek yogurt, minced garlic, lemon juice, and mint.
Season with salt and pepper to taste.
Mix well and refrigerate for at least 15 minutes to allow the flavors to meld.
Assemble and Serve:
Arrange the zucchini fritters on a serving plate.
Serve the yogurt dip alongside the fritters for dipping.
Chef's Notes:
For extra crispy fritters, you can dredge the zucchini mixture in a little extra flour before frying.
Feel free to experiment with different herbs in the fritters and dip. Chives, oregano, and basil are all excellent choices.
If you don't have Greek yogurt, you can use regular plain yogurt, but make sure to drain it well to remove excess liquid.
These fritters are delicious served hot or cold. They make a great appetizer, side dish, or even a light meal.
You can also add a pinch of red pepper flakes to the fritter batter for a little bit of heat.
