Yields: 6 mini cheesecakes Prep time: 20 minutes Cook time: 15-20 minutes
Ingredients:
For the Crust:
6 full graham crackers, finely crushed (about 1/2 cup crumbs)
2 tablespoons granulated sugar
3 tablespoons unsalted butter, melted
For the Filling:
12 ounces cream cheese, softened to room temperature
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 cup sour cream (optional, for added tang)
Toppings (optional):
Fresh berries (strawberries, blueberries, raspberries)
Whipped cream
Chocolate sauce
Caramel sauce
Equipment:
6 (4-inch) ramekins or oven-safe custard cups
Food processor or zip-top bag and rolling pin
Electric mixer (handheld or stand mixer)
Air fryer
Instructions:
Prepare the Crust:
In a food processor, pulse the graham crackers until finely crumbled. Alternatively, place graham crackers in a zip-top bag and crush them using a rolling pin.
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix well until the crumbs are evenly moistened.
Press about 2 tablespoons of the crumb mixture into the bottom of each ramekin, creating a firm crust. Use the back of a spoon or your fingers to pack the crust down firmly.
Make the Filling:
In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Gradually add the sugar, beating on medium speed until well combined and the mixture is light and fluffy.
Beat in the eggs one at a time, mixing well after each addition.
Stir in the vanilla extract and sour cream (if using). Mix until just combined. Do not overmix.
Assemble and Bake:
Divide the cheesecake filling evenly among the prepared ramekins, filling them almost to the top.
Preheat your air fryer to 350°F (175°C).
Place the ramekins in the air fryer basket, ensuring they are not overcrowded. You may need to cook in batches depending on the size of your air fryer.
Air fry for 15-20 minutes, or until the cheesecakes are set around the edges but still slightly jiggly in the center.
Turn off the air fryer and let the cheesecakes cool in the air fryer for 10 minutes before removing them.
Chill and Serve:
Transfer the ramekins to the refrigerator and chill for at least 4 hours, or preferably overnight, to allow the cheesecakes to fully set.
Once chilled, top the cheesecakes with your desired toppings, such as fresh berries, whipped cream, chocolate sauce, or caramel sauce.
