Creamy Dream: Effortless Air Fryer Cheesecake for a Perfect Dessert

Yields: 6 mini cheesecakes Prep time: 20 minutes Cook time: 15-20 minutes


Ingredients:

  • For the Crust:

    • 6 full graham crackers, finely crushed (about 1/2 cup crumbs)

    • 2 tablespoons granulated sugar

    • 3 tablespoons unsalted butter, melted

  • For the Filling:

    • 12 ounces cream cheese, softened to room temperature

    • 1/2 cup granulated sugar

    • 2 large eggs

    • 1 teaspoon vanilla extract

    • 1/4 cup sour cream (optional, for added tang)

  • Toppings (optional):

    • Fresh berries (strawberries, blueberries, raspberries)

    • Whipped cream

    • Chocolate sauce

    • Caramel sauce

Equipment:

  • 6 (4-inch) ramekins or oven-safe custard cups

  • Food processor or zip-top bag and rolling pin

  • Electric mixer (handheld or stand mixer)

  • Air fryer

Instructions:

  1. Prepare the Crust:

    • In a food processor, pulse the graham crackers until finely crumbled. Alternatively, place graham crackers in a zip-top bag and crush them using a rolling pin.

    • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix well until the crumbs are evenly moistened.

    • Press about 2 tablespoons of the crumb mixture into the bottom of each ramekin, creating a firm crust. Use the back of a spoon or your fingers to pack the crust down firmly.

  2. Make the Filling:

    • In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

    • Gradually add the sugar, beating on medium speed until well combined and the mixture is light and fluffy.

    • Beat in the eggs one at a time, mixing well after each addition.

    • Stir in the vanilla extract and sour cream (if using). Mix until just combined. Do not overmix.

  3. Assemble and Bake:

    • Divide the cheesecake filling evenly among the prepared ramekins, filling them almost to the top.

    • Preheat your air fryer to 350°F (175°C).

    • Place the ramekins in the air fryer basket, ensuring they are not overcrowded. You may need to cook in batches depending on the size of your air fryer.

    • Air fry for 15-20 minutes, or until the cheesecakes are set around the edges but still slightly jiggly in the center.

    • Turn off the air fryer and let the cheesecakes cool in the air fryer for 10 minutes before removing them.

  4. Chill and Serve:

    • Transfer the ramekins to the refrigerator and chill for at least 4 hours, or preferably overnight, to allow the cheesecakes to fully set.

    • Once chilled, top the cheesecakes with your desired toppings, such as fresh berries, whipped cream, chocolate sauce, or caramel sauce.
