Ingredients:
For the Chicken:
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon cornstarch
1 tablespoon soy sauce
1 teaspoon sesame oil
Salt and pepper to taste
For the Stir-Fry:
2 tablespoons vegetable oil
1 onion, chopped
2 cloves garlic, minced
1-inch piece of ginger, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 cup broccoli florets
1 cup sliced carrots
½ cup snow peas
For the Sauce:
¼ cup soy sauce
¼ cup chicken broth
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon cornstarch
Optional: Red pepper flakes to taste
Instructions:
Prepare the chicken: In a bowl, combine the chicken, cornstarch, soy sauce, sesame oil, salt, and pepper. Mix well and set aside.
Make the sauce: In a separate bowl, whisk together the soy sauce, chicken broth, honey, rice vinegar, sesame oil, and cornstarch. Set aside.
Stir-fry: Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the chicken and stir-fry until cooked through and lightly browned. Remove the chicken from the wok and set aside.
Add the vegetables: Add the onion, garlic, and ginger to the wok and stir-fry for 1-2 minutes until fragrant. Add the bell peppers, broccoli, carrots, and snow peas. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
