Yields: 4 servings Prep time: 20 minutes Cook time: 15 minutes

Ingredients:

  • For the Chicken:

    • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

    • 1 tablespoon cornstarch

    • 1 tablespoon soy sauce

    • 1 teaspoon sesame oil

    • Salt and pepper to taste

  • For the Stir-Fry:

    • 2 tablespoons vegetable oil

    • 1 onion, chopped

    • 2 cloves garlic, minced

    • 1-inch piece of ginger, minced

    • 1 red bell pepper, chopped

    • 1 green bell pepper, chopped

    • 1 cup broccoli florets

    • 1 cup sliced carrots

    • ½ cup snow peas

  • For the Sauce:

    • ¼ cup soy sauce

    • ¼ cup chicken broth

    • 2 tablespoons honey

    • 1 tablespoon rice vinegar

    • 1 teaspoon sesame oil

    • 1 teaspoon cornstarch

    • Optional: Red pepper flakes to taste

Instructions:

  1. Prepare the chicken: In a bowl, combine the chicken, cornstarch, soy sauce, sesame oil, salt, and pepper. Mix well and set aside.

  2. Make the sauce: In a separate bowl, whisk together the soy sauce, chicken broth, honey, rice vinegar, sesame oil, and cornstarch. Set aside.

  3. Stir-fry: Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the chicken and stir-fry until cooked through and lightly browned. Remove the chicken from the wok and set aside.

  4. Add the vegetables: Add the onion, garlic, and ginger to the wok and stir-fry for 1-2 minutes until fragrant. Add the bell peppers, broccoli, carrots, and snow peas. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.

  5. Combine and serve: Return the chicken to the wok. Pour the sauce over the chicken and vegetables, and stir-fry for 1-2 minutes until the sauce thickens. Serve immediately over rice or noodles.

Tips and Variations:

  • Vegetables: Use any vegetables you like! Some other great options include mushrooms, zucchini, asparagus, snap peas, and bean sprouts.

  • Protein: Instead of chicken, try beef, pork, shrimp, or tofu. Adjust cooking times accordingly.

  • Sauce: Get creative with the sauce! Add hoisin sauce, oyster sauce, or chili garlic sauce for different flavor profiles.

  • Spice: For a spicier stir-fry, add red pepper flakes to the sauce or use a spicy chili sauce.

  • Nuts: Add a handful of cashews, peanuts, or almonds for extra crunch and flavor.

  • Garnish: Garnish with chopped green onions, sesame seeds, or fresh cilantro.
