Yields: 2 servings Prep time: 10 minutes

Ingredients:

  • 1 cup plain or Greek yogurt

  • 1/4 cup granola

  • 1/2 cup fresh berries (such as strawberries, blueberries, raspberries, and/or blackberries)

  • Honey or maple syrup (optional, for extra sweetness)

Equipment:

  • Two glasses or parfait jars

Instructions:

  1. Prepare the berries: Wash and dry the berries. If using strawberries, hull and slice them.

  2. Layer the parfaits: In each glass or jar, start with a layer of yogurt. Top with a layer of granola, then a layer of berries. Repeat the layers until the glass is filled, ending with a layer of berries.

  3. Drizzle with honey or maple syrup (optional): If desired, drizzle a small amount of honey or maple syrup over the top of each parfait.

  4. Serve immediately: Enjoy your beautiful and delicious berry parfaits!

Tips:

  • For a more complex flavor, use a flavored yogurt, such as vanilla or honey.

  • To make the parfaits ahead of time, layer the ingredients in the glasses or jars and store them in the refrigerator for up to 24 hours.

  • If you don't have fresh berries, you can use frozen berries. Just be sure to thaw them before using.

  • You can also add other ingredients to your parfaits, such as nuts, seeds, or chocolate chips.

Variations:

  • Tropical Parfait: Use tropical fruits such as mango, pineapple, and kiwi.

  • Chocolate Berry Parfait: Use chocolate granola and add a layer of chocolate chips.

  • Peanut Butter Parfait: Use peanut butter yogurt and add a layer of chopped peanuts.
