Level Up Your Breakfast: Homemade Belgian Waffles from Scratch

This recipe creates light and fluffy Belgian waffles with a crispy golden-brown exterior. Perfect for a weekend breakfast or brunch!

Yields: 4-6 waffles Prep time: 15 minutes Cook time: 20-30 minutes

Ingredients:

  • 2 cups all-purpose flour

  • 2 tablespoons granulated sugar

  • 4 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 3/4 cups milk

  • 1/2 cup unsalted butter, melted

  • 2 large eggs, separated

  • 1 teaspoon vanilla extract

Equipment:

  • Belgian waffle iron

  • Two large mixing bowls

  • Whisk

  • Rubber spatula

  • Electric Mixer

Instructions:

1. Prepare the batter:

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  • In a separate bowl, whisk together the milk, melted butter, egg yolks, and vanilla extract.

  • Gradually add the wet ingredients to the dry ingredients, whisking until just combined. Do not overmix.

2. Whip the egg whites:

  • In a clean bowl, beat the egg whites with an electric mixer until stiff peaks form.

3. Combine and cook:

  • Gently fold the egg whites into the batter using a rubber spatula.

  • Preheat and grease your waffle iron according to the manufacturer's instructions.

  • Pour the recommended amount of batter onto the hot waffle iron.

  • Cook until golden brown and crispy, usually 3-5 minutes.

4. Serve and enjoy:

  • Serve immediately with your favorite toppings, such as fresh fruit, whipped cream, maple syrup, or chocolate chips.

Tips and Variations:

  • For extra crispy waffles, use a little less milk in the batter.

  • For sweeter waffles, add more sugar to the batter.

  • Add a teaspoon of cinnamon to the dry ingredients for a warm, spiced flavor.

  • For chocolate waffles, add 1/2 cup of cocoa powder to the dry ingredients.

  • To make buttermilk waffles, substitute buttermilk for the milk in the recipe.

  • You can store leftover waffles in the freezer for a quick and easy breakfast. Reheat in a toaster or oven.
